What is a “bark”?
A bark is a thin, crunchy snack made from nuts, dried fruits or chocolate. The name comes from the visual resemblance to “tree bark” because the mixture is spread out flat and later broken into irregular pieces – not cut, simply snapped apart.
Where does it come from?
Bark originated in North America. It was used to preserve nuts and chocolate: spread the mixture, chill it, break it, done. Today bark exists in countless variations, from sweet to protein-rich. It becomes especially aromatic with activated organic nuts, as they taste more intense, crunch better and are easier to digest.
Ingredients (for one baking tray)
Main ingredients:
- 80 g activated organic cashews (roughly chopped)
- 80 g activated organic pistachios (shelled) (roughly chopped)
- 6 soft dates (pitted, roughly chopped)
- Zest of 1 organic orange (finely grated)
- 1 tbsp coconut oil
- 1 tbsp maple syrup or date syrup
- 1 pinch unrefined sea salt
Optional extras:
- 1 tsp cacao nibs (for extra crunch and a hint of chocolate)
- 1 tsp sesame or hemp seeds (for extra texture and nutrients)

Preparation
Short version:
- Prepare the dates: Pit the dates and roughly chop them.
- Chop the nuts: Roughly chop activated cashews and pistachios so the crunch remains.
- Mix the liquids: Melt coconut oil over low heat. Stir in maple or date syrup, add orange zest and a pinch of sea salt. Mix well (the oil should be liquid but not hot).
- Combine: Place cashews, pistachios and dates in a bowl. Pour the warm liquid mixture over and mix thoroughly. Fold in optional cacao nibs and seeds.
- Spread on the tray: Spread a flat layer of about 1–1.5 cm onto a baking tray lined with baking paper. Press lightly into an even rectangle.
- Dry: Dry in the oven at 65 °C (fan oven). Leave the door slightly open (e.g. using a wooden spoon) so moisture can escape. Dry until the bark is firm and crunchy (several hours depending on oven). Check occasionally so it doesn’t darken.
- Cool and portion: Remove from oven, let cool completely, then break into pieces. Enjoy.
Detailed instructions:
Now let’s walk through the process step by step so you can prepare the bark with ease.
Start with the dates. Remove the pits and cut the soft dates into rough pieces. They provide small soft sweet spots in the bark, adding sweetness and binding everything together.
Then move on to the activated cashews and pistachios. Chop both types only roughly so they stay visible and keep their signature crunch. These larger nut pieces create the bark’s bite. If you prefer a mix, you can use our activated organic nut mix and chop all nuts together.
Next, prepare the liquid base. Add the coconut oil to a small pan and gently warm it until just melted – it should not be too hot. Stir in maple syrup or date syrup until combined. Add the zest of one organic orange. The zest brings a fresh citrus note and fragrant aroma. Finally add a pinch of sea salt. This tiny touch enhances the flavours and balances the sweetness.
Now combine everything. Place the chopped nuts and date pieces in a bowl. Pour the warm coconut oil-syrup mixture over them. Stir until everything is well coated and shiny but not overly wet. If you like, add the optional cacao nibs for a bitter note and extra crunch, or sesame and hemp seeds for roasted flavours and additional nutrients.
Now spread the mixture on your tray. Line the baking tray with baking paper (parchment) and press the mixture flat to about 1 to 1.5 cm thickness. It doesn’t need to be perfectly rectangular – small imperfections make the bark charming, because each piece turns out unique. The drying stage is crucial: set the oven to around 65 °C (fan). Keep the door slightly open so moisture escapes.
Thanks to the low temperature, the character of the activated nuts remains intact. 65 °C also stays below the pasteurisation threshold, preserving heat-sensitive nutrients, enzymes and valuable fatty acids. The nuts stay light and tender inside and your body benefits from the activation. You get near-raw quality with full snack enjoyment – crispy outside, slightly soft inside. Keep an eye on it so nothing burns.
Once the mixture is fully dry and stable, remove the tray and let everything cool completely. Only when the bark is fully cold, break it into pieces. Choose your preferred size, large slabs or small bite-size pieces. Store in an airtight jar or container to keep them crunchy and fresh.
