Agni created this pesto for anyone who truly appreciates the pure flavour of activated nuts. The combination of activated organic almonds, pecans, tofu and a hint of Mirin brings a creamy depth, gentle umami, and a touch of Japan to your kitchen.

This recipe uses just a few, carefully chosen ingredients. The base is made up of our activated almonds and pecans, tofu, a touch of mirin, and sea salt.
We love it best served with blanched carrots:

Preparation

  1. Briefly blanch the tofu in hot water for no more than one minute. Drain on kitchen paper and gently press to remove excess moisture. Set aside.
  2. Grind the nuts in a Suribachi (or small grinder) until the oils start to release.
  3. Add the mirin and grind a little more.
  4. Add the tofu and blend everything into a smooth, creamy paste.
  5. If you prefer a softer texture, add a splash of unsweetened plant milk.
  6. Season to taste with sea salt.
  7. Serve immediately or store in the fridge for up to two days.

  • With blanched carrots
  • As a dip for raw vegetables
  • On steamed greens (e.g. broccoli, spinach, kale)
  • With fresh apple, dried apricots or blueberries
  • As a topping for roasted vegetables or grain bowls
