Activation • Fermentation

Our activation process is based on a traditional fermentation in 2 steps:

  • 1. Soaking

    First, our nuts are soaked in a mixture of pure spring water and sea salt, initiating the fermentation process.

  • 2. Slow Drying:

    The nuts are then gently dried over several days at low temperatures below 65°C.They are not roasted, as roasting would degrade some of their valuable nutrients.

Why are our activated nuts so good for you?

Through our specific fermentation process, anti-nutrients are broken down, and a wide range of minerals and trace elements are released. Proteins and carbohydrates are broken apart by enzymes, allowing them to be more easily absorbed by the human body – they become activated, and so do you!

This creates the umami flavour and perfect crunch – simply to die for!

Additionally, fermented fibres support gut health by promoting the growth of beneficial bacteria with their prebiotic effects.

In our own production at Gut Mooseurach in Königsdorf, nestled in the foothilss of the Bavarian Alps, surrounded by nature. Here, we source the pure spring water from our own well, which is essential for our activation process.
